On the first day of Careme, Chef Almir riffed through his opening speech, which included a funny two minute bit on your A. I'm paraphrasing, but it went like this: You are starting this class with an A. Your job is to maintain the A. Hold your A. Love your A. You won't have it for long.
I held my A in Restaurant Production, despite the B+ on my plated competency. I know that no one in the industry is going to care about my GPA. No one. They will only care how hard I can work in the present, in their kitchen. I'm vain, so I'm holding my A, loving my A.
